Garlic Balsamic Chicken Recipe



4 Chicken Breasts
300g Cherry Tomatoes
75ml Balsamic Vinegar
50ml Chicken Stock
2 tbsp Honey
2 Garlic Cloves, crushed
1 tsp Dried Oregano
1 tsp Dried Basil
1tsp oil
Pinch of salt and pepper
Fresh Basil


Step 1: In a bowl, add together the balsamic vinegar, chicken stock, honey, crushed garlic, dried oregano, dried basil, salt, and pepper and whisk together
Step 2: Add the chicken breasts to the bowl and ensure they are fully covered in the marinade, then refrigerate in the bowl for 30 minutes
Step 3: Heat up 1 tsp oil in a large frying pan and add the chicken breasts to brown on both sides
Step 4: Once browned, add the remaining marinade and cook on a low heat until the chicken is cooked
Step 5: Add 300g of cherry tomatoes to the pan and let them soften
Step 6: Top with fresh basil and serve
