Banana and Oat Pancake Recipe

1 bananas
90g oats
2 large eggs
4 tbsp milk
1 tbsp baking powder
Coconut oil

Method

Step 1: Add the oats to a blender and blend until broken down into a fine consistency. Add the banana, milk, eggs and baking powder and blend together until you have a smooth batter.
Step 2: Heat the coconut oil in a pan on high heat, once hot, reduce to medium heat and ladle in the pancake mix.
Step 3: Cook for around 2 minutes until the bottom is golden, flip over and cook the other side.
Step 4: Transfer to a plate above simmering hot water to keep warm and repeat with the remaining batter.
Step 5: Stack to serve and top with any nut butter and your fruit of choice.
