Caramelised Onion Hummus Recipe

Ingredients
1 onion
2 tbsp olive oil
400g tinned chickpeas
1 garlic clove
Big pinch salt
2 tbsp vinegar
1/2 tsp cumin
1 tsp balsamic
2 tbsp tahini
Method
Step one: slice your onion, then add 2 tbsp olive oil to a small-medium frying pan on medium heat
Step two: when the oil is hot, add your onions and reduce the heat to medium low
Step three: stir them and cover with a lid. Leave for a couple of mins
Step four: stir your onions again and season with salt and pepper. Cover with a lid again and check on them every 5 mins
Step five: if the onions start to stick, add a splash of water. Repeat this until the onions appear lightly brown, soft, and sweet - they should be caramelised in 15-20 mins
Step six: add 3/4 the caramelised onions to your food processor, as well as the rest of the hummus ingredients
Step seven: blend to desired consistency and adjust to taste. When you’re happy with it, plate up and top with the rest of the caramelised onions, and a sprinkle of cumin
