Cheesy Baked Veg

For the veg
400g chopped green vegetables
60ml milk
30g grated cheese
1 tbsp cream cheese
1 tsp Dijon mustard
½ tsp smoked garlic powder
Salt and pepper to taste

For the topping
60ml milk
60g grated cheese
1 tsp cream cheese
1 tsp Dijon mustard
Salt and pepper to taste


Step 1: Preheat your oven to 200°C.
Step 2: Add your cream cheese, grated cheese, milk, garlic powder and mustard to a pan and simmer on medium heat until your cheese is melted, and the sauce has slightly thickened.
Step 3: Meanwhile, chop your vegetables, then add them to the pan and allow to shrink down, and, once the veg has softened, add to a non-stick baking dish and set aside.
Step 4: Add all the ingredients for your topping, minus 30g of cheese, to a microwave safe bowl and microwave for about 1 minute, until thickened.
Step 5: Pour the sauce over the vegetables, top with the remaining grated cheese, and bake for 10-15 minutes until golden.

Top tip! Use an oven safe pan to cook the vegetables, and use the same pan to bake in the oven once the toppings are added. Saves on washing up!
