Coconut Raspberry Loaf Cake Recipe
Ingredients
200g halved raspberries
175g butter, softened
175g golden caster sugar
175g self-raising flour
100g desiccated coconut
3 eggs
2-3 tbsp coconut yoghurt
Raspberries (for topping)
Method
Step 1: Preheat the oven to 180°C
Step 2: In a bowl, cream together the softened butter and sugar
Step 3: Once combined, add the eggs and whisk together
Step 4: Gradually add the flour in in thirds, whisking between each third
Step 5: Using a spatula, fold the desiccated coconut into the batter, followed by the halved raspberries
Step 6: Add the mixture to a lined loaf tin and bake for 1 hour
Step 7: Once cooled, top the loaf with coconut yoghurt and the remaining raspberries
