Fried Cajun Salmon Recipe

INGREDIENTS
910g salmon fillets
380g cornflour
3 eggs
125ml milk
125 ml lager
3 tbsp mustard
2 tbsp salt
2 tsp black pepper
1 tbsp Tabasco sauce
1 tsp cayenne pepper

METHOD
Step 1
Whisk together the eggs, milk, lager, mustard, Tabasco, cayenne pepper and half of the salt and pepper in a large bowl.
Step 2
Cut the fish fillets into bite-sized pieces, dip in the egg mixture until fully coated, then cover and refrigerate for 1 hour.
Step 3
Mix the cornflour and the remaining salt and pepper together in a shallow wide bowl.
Step 4
Remove the fish pieces from the marinade and dip in the cornflour, coating it evenly.
Step 5
Spray the fish pieces on all side with cooking spray.
Step 6
Set the temperature to 200 degrees and the time to approx. 15 mins and carefully place the fish pieces into the relevant cooking compartment.
Step 7
Check the fish is cooked before serving, and serve with your choice of sides.
