Sweet Potato Waffles Recipe

Super easy to prepare using our EK2249 Deep Fill Waffle Maker sweet-potato-waffle.jpg

Ingredients

150 g sweet potato, peeled and grated
2 onions, finely diced
2 large eggs
1 ripe avocado, chopped
1 lime, freshly squeezed
2 tbsp coconut flour (or plain flour)
Pinch of salt and pepper

Method

Step 1: In a large bowl, mix together the sweet potato, one of the eggs, the coconut flour and ½ tsp of salt
Step 2: Lightly grease the non-stick coated cooking plates
Step 3: Preheat the waffle maker
Step 4: Spoon half of the waffle batter into the centre of each non-stick coated cooking plate
Step 5: Carefully close the lid and cook for approximately 15 minutes, until fully cooked
Step 6: Whilst the waffles are cooking, poach the eggs and mash together the avocado, onions and lime juice

Tip: Serve with mashed avocado and poached eggs on top
