Sweet Potato Waffles Recipe
Super easy to prepare using our EK2249 Deep Fill Waffle Maker
Ingredients
150g sweet potato, peeled and grated
2 onions, finely diced
3 large eggs
1 ripe avocado, chopped
1 lime, freshly squeezed
2 tbsp coconut flour (or plain flour)
Pinch of salt and pepper
Method
Step 1: In a large bowl, mix together the sweet potato, one of the eggs, the coconut flour and ½ tsp of salt.
Step 2: Lightly grease the non-stick coated cooking plates.
Step 3: Preheat the waffle maker.
Step 4: Spoon half of the waffle batter into the centre of each non-stick coated cooking plate.
Step 5: Carefully close the lid and cook for approximately 15 minutes, until fully cooked.
Step 6: Whilst the waffles are cooking, poach the eggs and mash together the avocado, onions and lime juice.
Tip: Serve with mashed avocado and poached eggs on top.
