Tomato and Mixed Bean Soup Recipe
Ingredients
400g plum tomatoes
395g tin mixed beans in tomato sauce
2 garlic cloves, crushed
1 onion, peeled and finely chopped
400ml vegetable stock
1 tbsp tomato puree
1 tbsp olive oil
Handful fresh basil leaves
Salt and pepper, to taste
Method
Step 1: Add a little olive oil into the jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
Step 2: Stir to ensure all the ingredients are combined, then select the 'chunky' function.
Step 3: Allow the cycle to run.
Step 4: Once the soup cycle has finished, if you prefer a smooth soup use the 'blend' function to reach your desired consistency.
