  • 3 chicken legs
  • 50 g cornflakes
  • 30 g all-purpose flour
  • 40 ml buttermilk
  • 1/2 tbsp Dijon mustard
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/4 tsp ground sage
  • salt and pepper, to taste

Method

  1. In a wide bowl or on a plate, season the flour with salt and pepper, then dip the chicken in the flour so it's fully coated, then shake off any excess.
  2. Place the cornflakes in a resealable bag and ensure there is no air in the bag before sealing, then crush the cornflakes with a rolling pin.
  3. In a large bowl, mix the buttermilk, mustard, cayenne pepper, paprika and sage, then dip the chicken in the buttermilk and coat in the crushed cornflakes.
  4. Spray the chicken with oil and place in a air fryer to cook for approximately 5-10 minutes.
  5. Reduce the temperature to and cook for a further 10-15 minutes, checking that the chicken is thoroughly cooked before serving.
