Apple Crumble Pancake Recipe

100g plain flour
2 large eggs
300ml milk
4 digestive biscuits, crushed
1 tbsp sunflower oil
1 bramley apple
1 pink lady apple
1 tsp butter
1 tsp baking powder
1 tsp caster sugar
1 tsp cinnamon

Method

Step 1: Sift the flour into a bowl, adding the baking powder and cinnamon and create a well in the middle. Add the eggs and milk and whisk well until a smooth batter is formed.
Step 2: Gate the apple and gently fold into the pancake mixture.
Step 3: For the topping, crush up some digestive biscuits and add a tiny bit of butter to combine. Cut a pink lady apple into cubes and mix with a little bit of cinnamon.
Step 4: Heat a pan on high heat and add some oil, reduce to medium heat once hot. Add the pancake mix, making sure the pancakes are on the thicker side. It should take around 3 minutes for the first side to cook, flip over and allow the other side to cook.
Step 5: Stack to serve and top with the biscuit mixture, chopped apple and some maple syrup.
