Ingredients

  • 400 g plum tomatoes
  • 300 g chickpeas, drained
  • 500 ml vegetable stock
  • 1 carrot, chopped and peeled
  • 1 parsnip, chopped and peeled
  • 1 leek, finely chopped
  • 1 garlic clove, crushed
  • 3 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp olive oil
  • salt and pepper, to taste

Method

  1. Add the olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
  2. Stir all the ingredients together to ensure they are combined, then select the 'Smooth' soup function.
  3. Allow the cycle to complete. If preferred, press the blend button and allow cycle to run to achieve desired consistency.
  4. Once the soup is finished, serve with a handful of chickpeas and fresh rosemary.
