INGREDIENTS
400g plum tomatoes
300g chickpeas, drained
500ml vegetable stock
1 carrot, chopped and peeled
1 parsnip, chopped and peeled
1 leek, finely chopped
1 garlic clove, crushed
3 tbsp fresh parsley, finely chopped
1 tbsp fresh rosemary, finely chopped
1 tbsp olive oil
salt and pepper, to taste
METHOD
Step 1
Add the olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
Step 2
Stir all the ingredients together to ensure they are combined, then select the 'Smooth' soup function.
Step 3
Allow the cycle to complete. If preferred, press the blend button and allow cycle to run to achieve desired consistency.
Step 4
Once the soup is finished, serve with a handful of chickpeas and fresh rosemary.
