Ingredients
- 400 g plum tomatoes
- 300 g chickpeas, drained
- 500 ml vegetable stock
- 1 carrot, chopped and peeled
- 1 parsnip, chopped and peeled
- 1 leek, finely chopped
- 1 garlic clove, crushed
- 3 tbsp fresh parsley, finely chopped
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp olive oil
- salt and pepper, to taste
Method
- Add the olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
- Stir all the ingredients together to ensure they are combined, then select the 'Smooth' soup function.
- Allow the cycle to complete. If preferred, press the blend button and allow cycle to run to achieve desired consistency.
- Once the soup is finished, serve with a handful of chickpeas and fresh rosemary.
