Autumnal Vegetable Soup Recipe
Easily made in our EK5118 Digital Soup Maker
Ingredients
400g plum tomatoes
300g chickpeas, drained
500ml vegetable stock
1 carrot, chopped and peeled
1 parsnip, chopped and peeled
1 leek, finely chopped
1 garlic clove, crushed
3 tbsp fresh parsley, finely chopped
1 tbsp fresh rosemary, finely chopped
1 tbsp olive oil
Salt and pepper, to taste
Method
Step 1: Add the olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients to the jug
Step 2: Stir all the ingredients together to ensure they are combined, then set the timer to 40 minutes
Step 3: After 20 minutes, press the blend button for approximately 20 seconds
Step 4: Once the soup is finished, blend again until the desired consistency is reached, then serve
