Broccoli and Blue Cheese Soup
Easy to create using one of our Salter Electric Soup Makers
100g blue cheese (Stilton or Roquefort), crumbled
1 head broccoli, chopped into approx. 3cm florets
1 large onion, chopped
1 large potato, peeled and cubed
1 large knob of butter
800ml vegetable stock
Salt and pepper, season to taste
Step 1: Add the potato, onion, butter, broccoli and stock to the soup maker.
Step 2: Stir and select the ‘Smooth’ setting and allow to cook.
Step 3: The soup maker will emit a continuous beeping once it has completed the cycle.
Step 4: Add the blue cheese and blend further using the ‘Blend/Clean’ setting until smooth.
Step 5: Season to taste with salt and pepper.
Step 6: Serve the soup with fresh bread.
