Carrot and Coriander Soup Recipe

Ingredients

450g Carrots, peeled and chopped
800ml vegetable stock
1 onion, peeled and finely chopped
3 tbsp fresh coriander, chopped
1 garlic clove, crushed
Juice of one lemon
1 knob of butter
1 tbsp olive oil
1 tsp ground coriander
Single cream, to serve
Salt and pepper, to taste

Method

Step 1: Pour the olive oil into the soup jug to prevent the ingredients from sticking, then add all the ingredients to the jug
Step 2: Stir all the ingredients to make sure they are combined and then set the timer to 40 minutes
Step 3: Halfway through, press the blend button for 20 seconds, then cook for the remaining 20 minutes
Step 4: When the soup is finished cooking, blend further to reach the desired consistency and serve with a dash of cream
