Ingredients

  • 450 g carrots
  • 800 ml vegetable stock
  • 1 onion, peeled and finely chopped
  • 3 tbsp fresh coriander, chopped
  • 1 clove garlic, crushed
  • 1 lemon, juiced
  • 1 knob of butter
  • 1 tbsp olive oil
  • 1 tsp ground coriander
  • single cream to serve
  • salt and pepper to taste

Method

  1. Add a little olive oil into the soup jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
  2. Stir all the ingredients to make sure they are combined and then select the 'smooth' soup function.
  3. Allow the cycle to run through.
  4. When the soup is finished cooking, blend further to reach the desired consistency and serve with a dash of cream, a little chopped coriander and black pepper to taste.
