Carrot and Coriander Soup Recipe

Ingredients
- 450 g carrots
- 800 ml vegetable stock
- 1 onion, peeled and finely chopped
- 3 tbsp fresh coriander, chopped
- 1 clove garlic, crushed
- 1 lemon, juiced
- 1 knob of butter
- 1 tbsp olive oil
- 1 tsp ground coriander
- single cream to serve
- salt and pepper to taste
Method
- Add a little olive oil into the soup jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
- Stir all the ingredients to make sure they are combined and then select the 'smooth' soup function.
- Allow the cycle to run through.
- When the soup is finished cooking, blend further to reach the desired consistency and serve with a dash of cream, a little chopped coriander and black pepper to taste.
