Carrot and Coriander Soup Recipe

INGREDIENTS
450g carrots
800ml vegetable stock
1 onion, peeled and finely chopped
3 tbsp fresh coriander, chopped
1 clove garlic, crushed
1 lemon, juiced
1 knob of butter
1 tbsp olive oil
1 tsp ground coriander
single cream to serve
salt and pepper to taste
METHOD
Step 1
Add a little olive oil into the soup jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
Step 2
Stir all the ingredients to make sure they are combined and then select the 'smooth' soup function.
Step 3
Allow the cycle to run through.
Step 4
When the soup is finished cooking, blend further to reach the desired consistency and serve with a dash of cream, a little chopped coriander and black pepper to taste.
