Chicken Katsu Curry Recipe



3 chicken breasts
1 egg, beaten
120g Panko breadcrumbs
1 tbsp sesame oil
2 white onions, roughly chopped
2 carrots, roughly chopped
3 garlic cloves, crushed
1 tsp ginger, finely grated
1 ½ tbsp curry powder
1 tsp turmeric
1 tbsp lime juice
100ml water
1 tsp brown sugar
1 tsp honey



Step 1: Preheat the oven to 200° C
Step 2: Coat the chicken breasts in flour, egg, and toasted Panko breadcrumbs then bake for 20 minutes
Step 3: Meanwhile, heat up the sesame oil in a wok and, once hot, add the chopped onions and carrot and cook until the onions turn translucent
Step 4: Add the garlic, ginger, curry powder, turmeric, lime juice, water, brown sugar, and honey and stir together, then leave to simmer until sauce has thickened
Step 5: Once thickened, take the sauce off the heat and blend until smooth
Step 6: Slice the chicken breast
Step 7: Serve the katsu curry with rice, and make sure to place the chicken on top of the sauce on the plate
