Chicken Kebabs with Roasted Red Pepper Hummus Recipe

For the humous

1 tin of chickpeas (drained)
1 jar of roasted red peppers
4 cloves of garlic
1-2 tbsp lemon juice
1 tbsp smoked paprika
50 ml olive oil 
For the kebab:
1 chicken breast
1 carrot
1 tomato
1 cucumber
Handful cabbage


Step 1: Add the chickpeas, garlic, lemon juice, olive oil and smoked paprika to a blender and blend until smooth
Step 2: Use a food processor or grater to shred the carrot and cabbage 
Step 3: Use a food processor or knife to evenly slice the tomato and cucumber
Step 4: Use a griddle pan or electric grill to grill the chicken breast until evenly cooked on both sides
Step 5: Spread the roasted red pepper humous over the flatbread
Step 6: Layer the shredded carrot, cabbage, sliced tomato and cucumber onto the flatbread
Step 7: Top with the grilled chicken and enjoy!
