Chocolate Chip American Pancake Recipe
150g self raising flour
2 large eggs
5 tbsp milk
2 tbsp caster sugar
90g chocolate chips
Pinch of salt
Chocolate spread, to serve
Step 1: Sift the flour into the sugar and combine. Create a well in the middle and add all the wet ingredients, whisk well until a smooth, thick batter is formed.
Step 2: Add the chocolate chips and mix into the batter.
Step 3: Heat a pan on a high heat and add some butter. Once hot, reduce to a medium heat and add some of the pancake mixture - depending on the size of your pan you should be able to cook a few pancakes at a time - remember they need to be thick pancakes so require a bit more batter than regular ones.
Step 4: Once one side is cooked, flip over and allow the other side time to cook too - place the cooked pancakes on a plate above simmering water to keep them warm. Repeat steps until all batter is gone.
Step 5: Stack them up and serve them with your choice of topping - we recommend chocolate spread.
