Creamy Butternut Squash Pasta

Creamy Butternut Squash made with our EK5258 Plant M!lk Maker


400g butternut squash, cubed
250g spaghetti or pasta of choice

90g cashew pulp
30g fresh sage
4 tbsp nutritional yeast
2 garlic cloves, diced
1 onion, chopped
1 vegetable stock cube

1 tbsp olive oil
Salt and Pepper, to taste


Step 1: Steam or boil the butternut squash for 10-15 minutes until soft
Step 2: Boil the pasta following the instructions on the packet
Step 3. Meanwhile, heat the olive oil in a saucepan and fry the sage for 2 minutes or until crispy, then set aside
Step 4: Fry the onion and garlic until softened and brown
Step 5: Add the nutritional yeast, butternut squash, cashew pulp, stock cube and 200ml of pasta water
Step 6: Blend until smooth. Add more pasta water if the sauce is too thick
Step 7: Once combined, drain the pasta and add the cooked pasta into the sauce
Step 8: Top with the friend sage and salt and pepper to taste
