Crispy Roast Potatoes
1.5kg Maris Piper potatoes
6 tbsp goose fat
5-6 garlic cloves, chopped
1 sprig of rosemary
1 sprig thyme
1/2 tbsp whole black peppercorns
Salt to taste
Step 1: Peel and halve the potatoes before putting into a large saucepan along with the garlic, rosemary, thyme and peppercorns. Cover with cold water and bring to the boil, once boiling reduce the heat and simmer for 7 minutes.
Step 2: Drain the potatoes and leave to steam dry for 5 minutes.
Step 3: Preheat the oven to 220 degrees c. Add the goose fat to a roasting tin and put in the oven until very hot, approx. 5 minutes.
Step 4: Add the potatoes and aromatics into the hot goose fat, shake to ensure potatoes are covered. Roast for 35-40 minutes, turning occasionally.
Season the potatoes with salt and serve.
