Giant Cookie Pizza Recipe
Easily made using our EK4245 Stand Mixer
Ingredients
For the cookie
250g light brown sugar
200g unsalted butter, room temperature
2 egg yolks
1 tsp vanilla essence
275g plain flour
1 tsp baking powder
150g chocolate chips
For the topping
30g Biscoff Spread
30g Nutella
30g peanut butter
30g melted white chocolate
30g melted milk chocolate
30g vanilla buttercream
3 raspberries, halved
1 strawberry, thinly sliced
A drizzle of caramel
Handful of peanuts and peanut butter chocolates
Handful roughly chopped Oreos
Sprinkles
Method
Step 1: Preheat the oven to 180°C
Step 2: Cream together the sugar and unsalted butter
Step 3: When combined, add the egg yolks and vanilla extract and whisk
Step 4: Add the plain flour, baking powder, and chocolate chips and fold together using a spatula (add a little milk if the mixture is too thick)
Step 5: Press the cookie dough onto a lined pizza tray and bake for 25-30 minutes
Step 6: Once cooked and cooled, cut the pizza into 6 slices.
Step 7: Top each slice with a different topping: Nutella and strawberries, Biscoff and sprinkles, white chocolate and raspberries, milk chocolate and caramel, peanut butter and peanuts, vanilla buttercream, and Oreos
