A firm Winter favourite, this creamy leek and potato soup is easily made in a soup maker. Perfectly hearty and creamy, this soup will warm even the coldest of days.

INGREDIENTS

280g potatoes

600ml vegetable stock

2 leeks

40g butter

1 onion

1 tbsp olive oil

salt and pepper, to taste

single cream, to serve

METHOD

Step 1

Finely chop the onion and leeks.

Step 2

Peel and chop the potatoes.

Step 3

Add the olive oil to the soup maker jug to prevent the ingredients from sticking, and add everything except for the cream to the jug.

Step 4

Stir all the ingredients together to ensure they are combined, then select the smooth function on the soup maker.

Step 5

Once the cycle is finished, check the consistency and press the blend button if more blending is required.

Step 6

Serve with a dash of cream.
