Ingredients

  • 280 g potatoes
  • 600 ml vegetable stock
  • 2 whole leeks
  • 40 g butter
  • 1 whole onion
  • 1 tbsp olive oil
  • salt and pepper, to taste
  • single cream, to serve

Method

  1. Step 1...Finely chop the onion and leeks.
  2. Peel and chop the potatoes.
  3. Add the olive oil to the soup maker jug to prevent the ingredients from sticking, and add everything except for the cream to the jug.
  4. Stir all the ingredients together to ensure they are combined, then select the smooth function on the soup maker.
  5. Once the cycle is finished, check the consistency and press the blend button if more blending is required.
  6. Serve with a dash of cream.
