Leek and Potato Soup
A firm Winter favourite, this creamy leek and potato soup is easily made in a soup maker. Perfectly hearty and creamy, this soup will warm even the coldest of days. — Team Salter

Ingredients
- 280 g potatoes
- 600 ml vegetable stock
- 2 whole leeks
- 40 g butter
- 1 whole onion
- 1 tbsp olive oil
- salt and pepper, to taste
- single cream, to serve
Method
- Step 1...Finely chop the onion and leeks.
- Peel and chop the potatoes.
- Add the olive oil to the soup maker jug to prevent the ingredients from sticking, and add everything except for the cream to the jug.
- Stir all the ingredients together to ensure they are combined, then select the smooth function on the soup maker.
- Once the cycle is finished, check the consistency and press the blend button if more blending is required.
- Serve with a dash of cream.
