Mexican Soup Recipe
Ingredients
400g plum tomatoes
395g mixed beans in tomato sauce
500ml chicken stock
2 garlic cloves, crushed
1 large onion, peeled and finely chopped
1 large chilli, deseeded and finely chopped
1 lime, juiced
½ tsp ground cumin
Salt and pepper, to taste
Method
Step 1: Add a little olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
Step 2: Stir all the ingredients together to ensure they are combined, then select the 'chunky' soup setting.
Step 3: After the cycle completes, press the blend button and adjust until the desired consistency is reached.
Top Tip: Reserve some of the mixed beans, then stir them through the soup along with sweetcorn, cooked mince or other vegetables for added texture to your meal. Ensure any added ingredients are cooked through before serving.
