Ingredients
Your favourite falafel
1 pitta
Protein of choice
For the hummus
1 onion
2 tbsp olive oil
400g tinned chickpeas
1 garlic clove
Big pinch salt
2 tbsp vinegar
1/2 tsp cumin
1 tsp balsamic
2 tbsp tahini
For the harissa beans
1 tbsp harissa
1 tbsp olive oil
1 tbsp balsamic
½ lemon or 1 tbsp vinegar
200g beans or chickpeas
Salt
Pepper
¼ tsp ground cumin
Optional: ½ aubergine
For the tzatziki
4 tbsp greek yogurt
¼ cucumber, chopped into cubes
1 tbsp chopped mint
½ tsp garlic powder
¼ lime, juiced
Salt and pepper
Method
Step 1: For the hummus, slice your onion, then add 2 tbsp olive oil to a small-medium frying pan on medium heat
Step 2: When the oil is hot, add your onions and reduce the heat to medium low
Step 3: Stir them and cover with a lid. Leave for a couple of mins
Step 4: Stir your onions again and season with salt and pepper, then cover with a lid again and check on them every 5 mins- If the onions start to stick, add a splash of water
Step 5: Repeat this until the onions appear lightly brown, soft, and sweet - they should be caramelised in 15-20 mins
Step 6: Add 3/4 the caramelised onions to your food processor, as well as the rest of the hummus ingredients and blend to desired consistency and adjust to taste, then set aside
Step 7: Steam your chopped aubergine until tender
Step 8: Meanwhile, add all the beans and the dressing ingredients to a medium mixing bowl, then add in the steamed aubergine and season to taste
Step 9: Finally, cube your cucumber and add to a bowl with the rest of the tzatziki ingredients, seasoning to taste
Step 10: Plate up your hummus, tzatziki and your harissa beans, alongside your pitta, falafel, and protein of choice and serve
