225g cold butter, diced
350g plain flour
100g caster sugar
1 small egg, beaten
Pinch of salt
Step 1: Make the pastry by rubbing the butter into the flour, then mix in the caster sugar and a pinch of salt. Roll pasty into a ball, kneading briefly.
Step 2: Heat the oven to 200°C
Step 3: Press small walnut-sized balls of pastry into 18 muffin tin holes and spoon in the mincemeat.
Step 4: Use your hands to flatten a piece of pastry to create a lid and top the mince pies, sealing by pressing the edges.
Step 5: Brush the top of the mince pies with the beaten egg and bake for 20 minutes until the pies are golden.
Lightly dust with icing sugar to serve.
