One Pan Kebab Recipe

For the chicken
2 chicken breasts, butterflied
75g Greek yoghurt
2 tsp smoked paprika
2 tsp paprika
1 tsp cumin
1 tsp salt
1 tsp ginger puree
1 tsp garlic puree
1 tbsp tomato puree

For the flatbreads
300g self-raising flour
300g Greek yoghurt
1 tsp salt

For the toppings
6 slices halloumi
Shredded iceberg lettuce
Shredded cabbage
Sliced cucumber
Sliced tomatoes



Step 1: in a medium bowl, combine 75g Greek yoghurt, smoked paprika, paprika, cumin, salt, ginger puree, and garlic puree and mix together until combined
Step 2: Coat the chicken breasts in the yoghurt mixture and set aside to marinade
Step 3: Meanwhile, combine the flour, salt, and 300g Greek yoghurt and knead until a dough forms
Step 4: Divide the dough into 4 equal parts and roll each one out thin
Step 5: Heat up a griddle pan and drizzle some oil into the hot pan, then cook each flatbread 2-3 minutes on each side
Step 6: Next, cook the chicken in the griddle pan until it’s cooked through
Step 7: Grill the halloumi slices until they are browned on both sides
Step 8: Assemble the flatbreads, starting with a layer of tzatziki, then lettuce, cabbage, cucumber, tomato, chicken, and halloumi and top with chili sauce and coriander before serving
