A healthier twist on a British classic, pair with chips to make the perfect mid-week meal.

INGREDIENTS

100g cod fillets

40g breadcrumbs

1 large egg, beaten

2 tbsp plain flour

1 tbsp parmesan cheese

1 tsp dried basil

Salt and peper, to taste

METHOD

Step 1

Add the flour to a bowl and coat the cod fillets.

Step 2

In another bowl, mix together the breadcrumbs, Parmesan, basil, salt and pepper

Step 3

Dip the fillets in the beaten egg, then coat in the breadcrumb mixture.

Step 4

Spray the fish with oil on all sides, then place in a 190°C air fryer and cook for 15-20 minutes until golden brown.
