Roasted Vegetables
Ingredients
6 cherry tomatoes on the vine
5 garlic cloves, left whole with skins still on
3 small potatoes, skins scrubbed not peeled
3 large chestnut mushrooms, quartered
1 white onion, quartered
1 red pepper, sliced
1 yellow pepper, sliced
1/2 courgette, sliced at an angle
2tbsp olive oil
1tsp mixed herbs
Salt and pepper, to taste
Method
Step 1: Preheat the hot air fryer to 200
Step 2: Place all of the ingredients into a large, round dish or bowl, coated in olive oil.
Step 3: Season to taste and sprinkle on the mixed herbs. Place into the non-stick coated cooking basket and cook for approx 20-25 minutes. Stir half way through to ensure that all of the vegetables are cooked through.
Note: Alternatively, the ingredients can be placed directly into the non-stick coated cooking basket.
