Burnt Basque Cheesecake Recipe

Ingredients

800g soft full fat cheese 
225g caster sugar 
2 tbsp plain flour 
150ml sour cream 
4 eggs 
1 tsp vanilla 
Butter, to grease the tin  

Method 

Step 1: Preheat the oven to 220 degrees 
Step 2: Grease the Salter loaf tin and double line with greaseproof paper 
Step 3: Using the Salter stand whisk. Add the soft cheese & caster sugar to the bowl and whisk for 1 to 2 mins on a low setting.
Step 4: Add the flour, sour cream and vanilla. On a low setting whisk together and add the eggs, whisk for 1 – 2 minutes.
Step 5: Pour the mixture into the Salter loaf tin. Using the handle of a spoon move it through the mixture to ensure it has been evenly distributed. 
Step 6: Give the tin 3 sharp taps to ensure all air bubbles have risen to the top 
Step 7: Bake for 35-40 mins 

Let the cheesecake cool in the tin fully and then transfer to the fridge for a minimum of 2 hours before serving
