Caprese Pesto Pasta Salad Recipe

Ingredients

120g farfalle 
1 bunch of fresh basil 
30g pine nuts 
20g Parmesan 
100ml extra virgin olive oil 
1 garlic clove 
1 mozzarella ball 
10-15 baby plum tomatoes  
Salt & Pepper 

Method 

Step 1: Cook pasta to packet instructions. Once cooked let it cool 
Step 2: To make the pesto place basil, pine nuts, garlic, parmesan and olive oil in the Salter food chopper and blitz until all ingredients are combined. Loosen with a splash of water if you wish 
Step 3: Chop tomatoes and mozzarella  
Step 4: In a large pasta bowl combine pasta, tomatoes, mozzarella and pesto
