Chocolate And Cherry Brownies

Made in our EK5620BGRY Marino Stand Mixer

Ingredients

Brownies:
250g unsalted butter, melted 
330 g light brown sugar 
200 g granulated sugar 
4 large eggs, room temperature
2 tablespoons of leftover cherry liquid from jar  
110g cocoa powder 
110g plain flour 
100g dark chocolate drops or chunks
1/2 tsp salt

Cherry Sauce:
370g jar of cherries in kirsch - strained & liquid kept aside 

50g granulated or caster sugar

2 tablespoons of leftover cherry liquid from jar
1 tablespoon corn flour
2 tablespoons water


Method

For the Cherry Sauce:
Step 1: Add the cherries, cherry liquid, and sugar to a saucepan and heat gently
Step 2: Mix cornflour in water, then add to the cherries and stir until the filling thickens.
Step 3: Remove from the heat and let cool
 
For the Brownies:
Step 1: Preheat the oven to 180°
Step 2: Whisk together the melted butter and sugars until smooth.
Step 3: Add the eggs and whisk until the batter becomes a light colour.
Step 4: Fold in the cocoa powder, flour, and salt and mix until the batter is just combined. Lastly fold in the chocolate chunks.
Step 5: Pour batter into a deep lined baking tray
Step 6: Pour over the cherry sauce you made earlier and swirl it into the batter mix gently 
Step 7: Bake for 35mins
Step 8: Once baked, cool fully in the tray. Refrigerate for 1 hour before decorating and cutting into 16 squares

Serve with some whipped double cream and top with chocolate shavings and fresh cherries!
