Fridge-raid Vegan Frittata

Perfect in our BW09277 Earth Forged Aluminium Fry Pan
250g of extra firm tofu
100ml of any dairy milk substitute
2 tbsp of nutritional yeast flakes
1 tbsp corn starch
1 tsp of paprika
¼ tsp of turmeric
¼ tsp of black salt (normal salt is fine if you can’t find this but it provides an egg flavour!)
Cracked black pepper
2 cloves of garlic
Any veggies you want to use up – we used cherry tomatoes, spinach and onion.
Step 1: Blend the tofu, milk, yeast flakes and spices until smooth, if the mixture is too thick to blend – add milk one tbsp at a time until you reach a smooth consistency.
Step 2: Add in the corn starch and blend for 30 seconds to mix.
Step 3: Chop up your veggies and sauté in the Salter Earth Forged Aluminium 24cm frying pan.
Step 4: Add the frittata mixture in the pan and mix well, smoothing out the top.
Step 5: Let fry on a medium heat for around 10-12 minutes, occasionally checking for a golden colour.
Step 6: Top with anything tasty you need to use up, we used extra tomatoes, chilli oil and chives!
