Sticky Toffee Pudding

Ingredients 

For the cake:
200g of pitted dates
17dml of boiling water 
1 tsp of bicarbonate soda
2 eggs 
175g of light brown sugar 
2 tablespoons of black treacle 
1 tsp of cinnamon 
1 tsp of vanilla extract 
 
For the sauce:
50g of butter 
1 pinch of sea salt 
1 tablespoon of black treacle 
75g of caster sugar 

Method 

Step 1: Soak the dates in hot water for ten minutes and then mash or blend. 
Step 2: Meanwhile, using the Salter Bakes! Stand Mixer, beat the butter and sugar on high until pale and fluffy.
Step 3: Beat the eggs in one at a time on a lower speed.
Step 4: Add in the dates, treacle and vanilla extract.
Step 5: Sift in the flour and cinnamon and mix until combined
Step 6: Add to a lined loaf tin and bake at 180 degrees for 40 minutes.
Step 7: Meanwhile add all of the sauce ingredients to a pan over low heat until fully combined, when the loaf is till hot, pierce a few holes and pour the sauce over.

Serve with your choice of custard, cream or ice cream!
