Quick to prepare and packed with flavour, this dish is perfect for cosy evenings. Serve with naan bread or rice for a fuss-free, comforting meal.
INGREDIENTS
800g chicken thighs, diced
2 brown onions, diced
2 garlic cloves, crushed
2 tbsp ginger, grated
1 tbsp cornflour
150ml chicken stock
400g chopped tomatoes
1 tsp chilli powder
1 tsp garam masala
1 tsp turmeric
1 tsp cumin
1 tsp ground coriander
1 red chilli, chopped
200ml coconut milk
Fresh coriander, to taste
METHOD
Step 1
Add all your ingredients into the slow cooker and ensure they are mixed thoroughly.
Step 2
Then, cook for 7-8 hours low, or 4-5 hours on high.
Step 3
Ensure chicken is cooked through before garnishing with coriander and fresh chillis before serving.
Step 4
Serve with naan bread or rice and enjoy!
