Strawberry & Lemon Blondie Recipe

Recipe by @molls_kitchen using the Salter Cosmos Stand Mixer



500g of butter
200g caster sugar
300g light brown soft sugar
5 medium eggs
430g plain flour
2 tbsp cornflour
Pinch of salt
1/4 teaspoon of baking powder
300g of white chocolate chips
1 large lemon, juiced and zested
1 full punnet of strawberries, washed and sliced


Step 1: Preheat your oven to 180/160 fan and line a tin with parchment paper.
Step 2: Wash and slice your fresh strawberries.
Step 3: Melt the butter and then add the melted butter and sugar to the stand mixer and mix with the whisk attachment until pale and smooth.
Step 4: Add in the eggs, lemon juice and zest and beat for an extra 30 seconds.
Step 5: Sieve in the dry ingredients as well as the chocolate chips and strawberries (leave a few aside for decoration!) and mix well with a spatula.
Step 6: Spread the mixture into the tin and bake for 15-30 mins. The centre should have a slight wobble but a toothpick should not have any batter on it.
Leave to cool completely before slicing up and enjoy!
