Ingredients
- 3 tsp ground coffee
- 3 tbsp coffee liqueur
- 20 g mascarpone
- 80 g condensed milk
- 1 tsp vanilla extract
- 6 sponge fingers
- 1 tbsp cocoa powder
Method
- In a large bowl, stir together the ground coffee with 3 tablespoons of boiling water, then mix in 70ml of cold water and a splash of coffee liqueur.
- Using your Salter Hand Mixer, beat the vanilla extract, condensed milk, and mascarpone until smooth and creamy.
- Take the sponge fingers and dip them into the coffee mixture, then layer them neatly in the bottom of your dish. Spoon the creamy mixture over the top and finish with a dusting of cocoa powder.
- Pop the dish into the fridge to chill for an hour, then serve up this delightful after-dinner treat.
