Pesto Parmesan Chicken Recipe

4 chicken breasts, flattened
1 white onion, diced
240ml chicken stock
3 tbsp green pesto
75g grated parmesan
120ml single cream
2 tbsp plain flour
3 tbsp butter
2 garlic cloves, crushed
1 tsp onion granules
1 tsp dried basil
1 tsp dried oregano
½ tsp garlic granules
½ tsp salt
½ tsp black pepper



Step 1: In a bowl, combine the onion granules, basil, oregano, garlic granules, salt, and pepper
Step 2: Coat the chicken breasts in the spice mixture on both sides and sear the chicken on both sides until cooked
Step 3: Once cooked, remove the chicken from the pan and add in the butter
Step 4: Once melted, add the onions and garlic and cook until the onions are translucent
Step 5: Next, add the flour and whisk this through, then, while whisking, gradually add the chicken stock
Step 6: Add the pesto, parmesan, and single cream, whisk, then add the chicken and leave to simmer until the sauce has thickened
Step 7: Top with fresh parsley and serve
