Chocolate Raspberry Cookie Recipe
Easily made in our EK4245 Stand Mixer
Ingredients
275g plain flour
250g white/milk chocolate chips
20g freeze dried raspberries
115g unsalted butter
100g granulated sugar
100g brown sugar
1 large egg
1 tbsp cornflour
½ tsp salt
½ bicarbonate of soda
2 tsp vanilla extract
Method
Step 1: Preheat your oven to 200°C
Step 2: stir together the cornflour, plain flour, bicarbonate of soda, and salt into a bowl and set aside
Step 3: Add the brown sugar, granulated sugar, and butter into a bowl and mix together until fluffy
Step 4: Add the vanilla extract, egg, and flour, and mix together until a smooth dough forms
Step 5: Add your chocolate chips and raspberries and gently mix together
Step 6: Line a baking tray with greaseproof paper and roll the dough into 12-14 equal sized balls, then bake these for 10-15 minutes
