Ingredients
- 150 g red lentils
- 800 ml vegetable stock
- 1 onion, peeled and finely chopped
- 1 large carrots, peeled and grated
- 1 small ginger piece, peeled and grated
- 1 lime, juiced
- 1 pinch chilli flakes
- 1 tbsp olive oil
- 1 tsp cumin seeds
- small bunch coriander leaves
Method
- Add a little olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients to the blending jug.
- Stir all the ingredients together to ensure they are combined.
- Select the 'smooth' soup setting. Allow the cycle to run.
- Once the soup is finished, blend again until the desired consistency is reached. Add any extra ingredients, then serve.
