Ingredients

  • 8 whole baby corns
  • 3 whole large chestnut mushrooms
  • 2 whole white onions
  • 1 whole butternut squash
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 1 orange pepper
  • 1 courgette
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tsp dried mixed herbs
  • salt and pepper, to taste

Method

  1. Slice the peppers, baby corn and courgette.
  2. Peel and chop the butternut squash.
  3. Quarter the onions and mushrooms.
  4. Combine all the vegetables and evenly coat them in olive oil, and season with salt, pepper, and mixed herbs.
  5. Set the air fryer temperature to and cook the vegetables for 15 minutes. Check they are fully cooked before serving.
  6. Serve the vegetables drizzled with the soy sauce alongside rice or noodles.
