Delicious stir fry vegetables that are perfect for a Chinese fakeaway at home. Serve with rice or noodles for a filling yet healthy meal.

INGREDIENTS

8 baby corns

3 large chestnut mushrooms

2 white onions

1 butternut squash

1 red pepper

1 green pepper

1 yellow pepper

1 orange pepper

1 courgette

2 tbsp olive oil

2 tbsp soy sauce

1 tsp dried mixed herbs

salt and pepper, to taste

METHOD

Step 1

Slice the peppers, baby corn and courgette.

Step 2

Peel and chop the butternut squash.

Step 3

Quarter the onions and mushrooms.

Step 4

Combine all the vegetables and evenly coat them in olive oil, and season with salt, pepper, and mixed herbs.

Step 5

Set the air fryer temperature to 200ºC and cook the vegetables for 15 minutes. Check they are fully cooked before serving.

Step 6

Serve the vegetables drizzled with the soy sauce alongside rice or noodles.
