Stir Fry Vegetables with Soy Sauce

Ingredients
- 8 whole baby corns
- 3 whole large chestnut mushrooms
- 2 whole white onions
- 1 whole butternut squash
- 1 red pepper
- 1 green pepper
- 1 yellow pepper
- 1 orange pepper
- 1 courgette
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tsp dried mixed herbs
- salt and pepper, to taste
Method
- Slice the peppers, baby corn and courgette.
- Peel and chop the butternut squash.
- Quarter the onions and mushrooms.
- Combine all the vegetables and evenly coat them in olive oil, and season with salt, pepper, and mixed herbs.
- Set the air fryer temperature to and cook the vegetables for 15 minutes. Check they are fully cooked before serving.
- Serve the vegetables drizzled with the soy sauce alongside rice or noodles.
