Strawberry Pancake Stack Recipe

Whisked to perfection in our EK4245 Stand Mixer

Cheesecake Filling

400g strawberries
150g Philadelphia
75g icing sugar
1 tbsp vanilla essence
200g strawberries, chopped
100g Greek yoghurt
1 tbsp lemon juice
1 tbsp vanilla essence
1 tbsp lemon juice
100g caster sugar


1 tbsp cornflour
1 tbsp water
100g plain flour
1 tbsp baking powder
2 tbsp caster sugar
1 tsp vanilla essence
2 egg yolks
50ml milk
2 egg whites
1 tbsp unsalted butter
Strawberry sauce
Whipped cream


Step 1: Blend the strawberries
Step 2: Whisk together Philadelphia, icing sugar and vanilla
Step 3: Mix in chopped strawberries
Step 4: In a separate bowl, mix Greek yoghurt and lemon juice
Step 5: In a saucepan, add half of the blended strawberries, vanilla, lemon juice, sugar and stir
Step 6: Add in cornflour, water, and whisk
Step 7: Separately whisk plain flour, baking powder, caster sugar and vanilla essence
Step 8: Add in milk, Greek yoghurt mix and whisk
Step 9: Whisk egg whites until soft peaks form
Step 10: Gradually add egg whites into the previous mix and stir
Step 11: Set aside for 15 minutes
Step 12: Make the pancakes
Step 13: Layer pancakes with cheesecake mixture in between each one
Step 14: Top with strawberry sauce and whipped cream
