Thai Chicken and Basil Stir Fry Recipe

2 chicken breasts, diced
1 tsp red Thai paste
100ml chicken stock
Juice of 2 limes
A handful of basil leaves
3 garlic cloves, finely chopped
2 red chillies, finely chopped
2cm ginger, finely chopped
2tbsp sesame oil



Step 1: In a wok, heat up the sesame oil, then add the diced chicken and cook until browned
Step 2: Next, add the chillies, garlic and ginger and stir fry for 1 minute
Step 3: Add the red Thai paste and chicken stock, stir then add the lime juice and basil leaves, mix and remove from the heat
Step 4: Serve on top of rice and top with a few more basil leaves
