Tiramisu Mug Cake Recipe

For the cake

2 tbsp oat flour
1 tbsp self-raising flour
1 tsp sugar or equivalent sweetener
1 tbsp vanilla whey protein powder
1/4 tsp baking powder
Add plant milk until you have a cake batter

For the coffee

50ml brewed espresso
Small drop apple juice or syrup

For the topping

3 tbsp yoghurt
Syrup to taste
Cocoa powder


Step one: Mix all the dry ingredients together for the cake in a small bowl, then add the plant milk bit by bit until you have a cake batter consistency
Step two: Pour into a microwave safe bowl/ ramekin, then microwave for 1 minute 30 seconds - 2 mins until risen and cooked through
Step three: Brew your coffee, then add a splash of apple juice, and or a splash of syrup/ sweetener
Step four: When the cake has cooled slightly, pierce the surface with a fork, then pour your coffee mixture over evenly
Step five: For the topping, mix together your yogurt and syrup, taste, then pour over your cake and spread evenly.
Step six: Refrigerate for 10-15 mins, or overnight, then when ready to serve, dust with cocoa powder and top with coffee beans
