This recipe features crispy chicken bites coated in a flavourful mixture of crackers, garlic, lemon zest, butter, and parsley. The tender chicken breast pieces are perfectly seasoned and air-fried to a golden, crisp finish, making them ideal for a quick dinner or a tasty lunch. Top Tip! Best served with fluffy rice, stir-fried noodles or steamed vegetables.

INGREDIENTS

6 cream crackers

1 skinless chicken breast fillet

1 garlic clove, crushed

1 medium egg

1 tbsp butter

1 tbsp dry parsley

1/2 lemon

Plain flour

Salt and pepper, to taste

METHOD

Step 1

Add the garlic and zest of the lemon to a food processor along with the butter, parsley, salt, pepper and crackers. Process until the mixture is very fine.

Step 2

Sprinkle the flour onto a second plate, then crack the eggs into a small bowl to beat with a fork.

Step 3

Cut the chicken breast into 2cm pieces, then roll the chicken pieces in the flour until all sides are completely coated then dip them into the egg, and finally the crumbs.

Step 4

Spray the chicken on all sides with oil and place them into a 200°C air fryer and cook for 10-15 minutes until the chicken is golden and crisp.
