Apple and Almond Cake Recipe

Cooked to perfection in our Megastone Round Pan
Ingredients
For the Apple Puree 2 Apples 1 tsp Lemon juice 2 tsp caster sugar
For the cake 7 large eggs 285g ground almonds 250g caster sugar 1/2 tsp lemon juice 40g flaked almonds
Method
Step one: peel, core & chop the apples roughly Step two: put them in a saucepan with the lemon juice, sugar & bring the pan to a bubble over a medium heat Step three: cover the pan, cook over a low heat for 10 mins until softened. Leave to cool Step four: preheat the oven to 160ºC Fan; oil a 24cm round baking tin with some oil & line the bottom with baking paper Step five: put the cooled puree, eggs, ground almonds, caster sugar, lemon juice in a processor & blitz to a puree Step six: pour into the prepared tin, sprinkle with flaked almonds, bake for 35 mins Step seven: put on a wire rack to cool for 10 mins before removing from the tin
