INGREDIENTS

1 medium butternut squash, peeled and chopped

1 onion, peeled and finely chopped

1 medium potato, peeled and chopped

600ml vegetable stock

2 cloves garlic, crushed

1 tbsp olive oil

salt and pepper to taste

METHOD
