Cheesy Stuffed Mushroom Recipe
6 large portobello mushrooms
150g cream cheese
75g cheddar cheese, grated
2 garlic cloves, chopped
2 tbsp lemon juice
Step 1: Preheat the oven to 220 degrees.
Step 2: Remove the stalks of the mushrooms and wipe clean, ensuring any dirt is removed. Place on a baking tray top side down.
Step 3: In a bowl, mix the cream cheese, garlic, spinach and lemon juice. Season with salt and pepper to taste.
Step 4: Spoon the mixture into the hollows of the mushrooms and top with grated cheddar.
Step 5: Bake the mushrooms for 8-10 minutes or until the cheese has melted.
Garnish with salad and serve with some crusty bread.
