Chicken Quesadillas

Delicious cooked in one of our non-stick health grills!quesadilla.jpg


2 flour tortillas
80g cooked chicken, shredded (alternatively, a meat-free substitute can be used if preferred)
10g butter, melted
4 spring onions, finely chopped
1 small finely chopped red chili pepper
2 tbsp grated cheddar cheese
1 tbsp pitted black olives, finely chopped
Salt and pepper


Step 1: Preheat the health grill.
Step 2: Coat one side of each tortilla with a little melted butter.
Step 3: Place all of the other ingredients into a bowl and mix well.
Step 4: Season with salt and pepper, to taste, and divide the mixture equally between the 2 tortillas.
Step 5: Fold each tortilla in half and lightly brush with the remaining butter.
Step 6: Place the tortillas onto the health grill, close the lid and cook for approx. 6 minutes or until the chicken is golden brown and crispy.
Step 7: Serve warm with salsa or salad.
