Chunky Vegetable Soup Recipe

- 400 g butter beans
- 800 ml vegetable stock
- 1 celery sticks, chopped
- 1 onion, peeled and finely chopped
- 2 cloves garlic
- 1 medium potato, peeled and chopped
- 1 large carrot, peeled and chopped
- 1/4 head savoy cabbage, chopped
- 2 tbsp tomato puree
- 1 tbsp olive oil
- salt and pepper to taste
Method
- Add the olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
- Stir all the ingredients together to ensure they are combined, then select the 'chunky' soup function.
- Allow the cycle to run through
- Once the soup cycle is finished, you can serve immediately or select the 'blend' function if you prefer a smoother consistency.
