Chunky Vegetable Soup Recipe

INGREDIENTS
400g butter beans
800ml vegetable stock
1 celery sticks, chopped
1 onion, peeled and finely chopped
2 cloves garlic
1 medium potato, peeled and chopped
1 large carrot, peeled and chopped
1/4 head savoy cabbage, chopped
2 tbsp tomato puree
1 tbsp olive oil
salt and pepper to taste
METHOD
Step 1
Add the olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
Step 2
Stir all the ingredients together to ensure they are combined, then select the 'chunky' soup function.
Step 3
Allow the cycle to run through
Step 4
Once the soup cycle is finished, you can serve immediately or select the 'blend' function if you prefer a smoother consistency.
