Chunky Vegetable Soup Recipe
Delicious cooked in one of our Salter soup makers.
400g butter beans
800ml vegetable stock
2 celery sticks, roughly chopped
1 medium potato, peeled and chopped
2 garlic cloves, crushed
1 large carrot, peeled and chopped
1 onion, peeled and roughly chopped
¼ head savoy cabbage, chopped
2 tbsp tomato puree
1 tbsp olive oil
Salt and pepper, to taste
Step 1: Add the olive oil to the jug to prevent the ingredients from sticking, then add all the ingredients to the jug.
Step 2: Stir all the ingredients together to ensure they are combined, then select the 'chunky' soup function.
Step 3: Allow the cycle to run through.
Step 4: Once the soup cycle is finished, you can serve immediately or select the 'blend' function if you prefer a smoother consistency.
Top Tip! Make it seasonal! Add in peas, green beans or whatever vegetables are in season in your local area for a truly scrumptious lunch. Got leftover roasted meats? Throw that in and warm through before serving for a heartier meal.
